Mint Chocolate and Omega 3 Protein Shake (vegan, dairy-free and raw)

After discovering that her family was suffering from a variety of reactions to food and finding herself diagnosed with celiac disease, Kelly of The Spunky Coconut blog had to make some major changes in her family’s overall diet.  The first step was to start following a gluten free diet. Next she eliminated both dairy and refined sugars and one by one, their symptoms disappeared.  For many, taking such seemingly drastic steps would seem quite daunting.  Now that’s taking control of not just your own health, but that of your family, and all through food.  What’s great about Kelly’s blog is that she’s developed and still continues to develop recipes that may seem restrictive;  but for those who are dealing with similar issues, they are life-style changing without having to sacrifice taste and flavor.

In fact, she’s even a published author.  Her book, The Spunky Coconut Cookbook,  contains 115 recipes, including 30+ not featured online!  You can purchase it on Amazon.com. So if living gluten-free, dairy free and sugar-free is something you’re now facing or you’re looking for a change in your diet, The Spunky Coconut blog will definitely be a great resource, so be sure to check it out.  For now, here’s Kelly’s recipe for a Mint Chocolate Protein and Omega 3 Shake that even includes a link on her video on how to make almond milk.  Click  here to see the original post of this recipe.

    Sounds delicious.

Why suggest that chia seed be ground into a meal? Unlike flax seeds, chia seeds DO NOT need to be ground to get the nutrients. I put them in mine whole or soak them overnight in some water to make a gel. :o )
